Primary Research: The Solely Gluten Free Restaurant

A small, quaint and welcoming family-run restuarant with a chef who has worked in a michelin star restaurant taking charge in the restaurant.
Speaking to one of the family members, he described how they open for both lunch and dinner usually depending on the business and cater for not only gluten intolerances but also vegetarians and vegans.
It is pretty brand new, only opening 6 months ago with them describing how they're still in the process of putting their name board on the outside!
Asking about their previous dabbles with advertisements they aren't particularly aware of what to do, describing their use of newspaper advertising being 'crap.' They are attempting to Facebook advertise now though however don't have much guidance or vision on what to do.
However, they describe their involvement with Coeliac UK which their awareness week is coming up shortly and said that the organisation will be recognising them as a restaurant and making an announcement which is practically unheard of.
Their food is unlimited in choice in demands to the growing intolerance market.
They also have a unique policy; your table is yours for the night. They don't relay any of their 9 tables and rather promote the diners to stay there all night at their leisure and don't push people out. They have some larger facilities upstairs for up to 20 guests in a private dining area too still keeping that relaxed atmosphere they are so passionate about.
But who is their current audience?
They said that to start it was more of an older generation generally between 30 to 60 but they are starting notice a younger clientele usually 18-24 possibly due to them now advertising on social media. They also say how their audience is more female, although many males will join they are usually gluten intolerant themselves and rarely see men who aren't gluten intolerant dining there.
